My wife and I are really trying hard to eat better each day. A while back, she got some quinoa from the market. I’ll be honest – I had no idea what quinoa was. All I had ever heard was, “it’s like pasta, but it’s supposed to be good for you or something.” So me being the researcher that I am, I decided to find out more about it… and then I found a recipe for corn, tomato and quinoa salad I decided I had to try.
What Is Quinoa?
After some research, I found out that quinoa that people eat is actually the seed of the quinoa plant. So what is the quinoa plant, you ask? It’s a species of goosefoot (Chenopodium) that is grown as a grain crop, and is closely related to such plants as the beetroot, spinach and tumbleweeds. I know, how much further could you get apart than those three, right?
Quinoa is high in protein and fiber, contains no gluten, contains all eight essential amino acids, and is loaded with vitamins such as riboflavin, calcium, vitamin E, iron, potassium, phosphorus, magnesium, folic acid and beta carotene. Quinoa has been known to promote weight loss, build muscle, alleviate migraine headaches, help diabetes, promote cardiovascular health and prevent hardening of the arteries.
Some say quinoa is a superfood. I don’t know about that, but I DO know is that it’s very versatile and can take on just about any flavor. That’s right – it’s the tilapia of grains!

[yumprint-recipe id=’35’]Now, I’ll be honest. I tasted the quinoa when it was done before I added anything to it. It was bland. Flavorless. It wasn’t gross, it just didn’t taste like anything in particular at all. I say that because I honestly think you could use quinoa in a myriad of different applications. I think you could even do a knock-off rice pudding (which I may try one day).
With that said, I wasn’t really expecting to like this recipe at all… but MAN this is some good stuff! I had it immediately when I made it, so it was a little warm. I added just the right amount of salt and pepper (for my particular taste, that is) so it was fantastic!
