Recently I polled my Facebook fans and asked “If you could only grow one vegetable this year, what would it be?” Over half of them answered “tomatoes”. Even though tomatoes are technically a fruit, we still use them as vegetables, so we won’t argue. (Incidentally, that was my answer to the question, too.)
So if you have lots of tomatoes, how do you use them? Sandwiches, salads, sauces, soups, stews… all good choices. But how about dips? specifically this delicious bacon tomato dip!
Serve this with crackers, toast points, or fresh veggies like carrots, broccoli and celery. I mean, come on… you had me at “bacon”… but to add fresh, home-grown tomatoes, too? I’m super happy now!
